60cl Water
10cm kombu
20g or 4 packs of 5g Kezuri-bushi
In a saucepan, bring water and kombu. soak 1 hour.

medium heat, uncovered, bring almost to boil. Remove the kombu, reserving broth for the second. Return water to boil.
5cl Add cold water, Kezuri-bushi. Bring to a boil and remove from heat. Do not stir. Allow the bonito settle. Skip to China. Keep Kezuri-bushi stock for the second.
The first soup is ready. It is most often used for preparing soups.

Second dashi
for 60cl
Kezuri kombu and first-bushi reserved broth
60cl Water
15g Kezuri-bushi
Put water in a saucepan with kombu and Kezuri first-bushi reserved broth. Po
rter to a boil and simmer 15 minutes or until broth has reduced by one third. Add 15g Kezuri-bushi. remove from heat immediately. Skim. Let stand and filter. it's ready.
This broth can be used to cook vegetables, meat, fish.
