A chili?! (Here it is .... here it is party to mumble) " You can not make a couscous like everyone else on a Friday! "
Yep, he could have said something like that .
This then had chili flavors tagine and yet it was not planned.


Vegetarian Chili in my way
inspired by Sheila Lukins ... but not that
2 tablespoons olive oil
2 onions, coarsely chopped
2 carrots, peeled and cut into pieces 1 cm
2 cloves garlic, peeled, minced
2 tablespoons chili powder
2 tablespoons cumin seeds
approximately 100g sweet potato
2 peppers (red and yellow), roasted, peeled, seeded and cut into strips.
1 can of peeled plum, chopped
1 tablespoon of sugar cane
1 tablespoon thyme
300g pumpkin chopped
1 christophine
200g red azuki beans
Salt and black pepper
a handful of raisins
Parsley flat
Coriander
Lime juice
The day to soak beans. If like me, you do not know yet that we will make a chili can be on the same day, put the beans soak 1 hour or 2 and cook in unsalted water with a piece of kombu. Bring to a boil and let boil for 1h30. When azuki are tender, drain.
may also like Sheila Lukins use canned chickpeas. (No beans in the original recipe)
Heat oil over medium heat in a large casserole. Add onions and carrots. The melt, stirring for about ten minutes. Add garlic and cook a few more minutes. Reduce heat. Add chili powder and cumin. Cook 1 minute more. Stir in sweet potatoes, peppers, tomatoes and their juice, cane sugar, thyme. Bring to a boil. Then reduce heat, cover partially and simmer 25 minutes stirring occasionally.
Add the pumpkin, christophine, raisins and fresh herbs.
Adjust seasoning. (I added a little chili powder)
Stir in beans.
Simmer uncovered about twenty minutes, stirring occasionally until vegetables are tender.
Just before serving, squeeze lemon juice. Sprinkle with fresh cilantro.
Serve with shredded cheddar cheese, ginger confit (why not ...) of fresh yogurt, Corn Bread. (I did not find flour Corn, replaced by corn patties blown).

My chili is usually spicy, very spicy and bursting. This was indeed spicy, but mostly scented confit with undeniably Mediterranean accents.

And I liked the yogurt replaced by the fresh labneh .
To make the labneh, yogurt mix 5 to 1 teaspoon of salt. Place in Drain, cool, through a muslin for ten hours.
