To celebrate my return to my galley, I leave the "big game"! Hedgehogs
sea, or sea urchin or simply urchins.
When the sea urchin encounter a scoop. The sea urchin
that are caught mainly in the Mediterranean and Britain must take his season, fishing and selling are prohibited between May and September.

In ancient times, I was amused to realize, what a game!
Between preparation, the hours in the fridge, I opted for convenience, the Halles de Lyon, in Giraudet, the dumplings are light and delicious.
- 4 dumplings
- 12
urchins and their water - 100 gr butter
- 25 cl cream
- half a lemon
- salt, pepper
- some spinach
Open urchins, mandatory: Wear gloves, with sharp scissors to pierce the sea urchin, cut around mid height. Remove
upper cap.
Conserve water urchins, corals recover gently.
Mash with the butter.
Boil water urchins, add cream, stir, add the butter little by little urchin.
Pepper.
Add the juice of half lemon.
Preheat oven to 180 degrees.
Place dumplings in a baking dish, drizzle with sauce.
Bake for 20 minutes.
Serve just a few spinach leaves blanched and sauteed in a little butter.
Delicious!
Since this is the celebration, a joyous table needed!
Not wanting to spoil the pleasure of my guests (and mine) I have no photos of the finished dish, it must be admitted that the blow was a kid faced with a scoop right out of the oven, immediately served.
